Made with 100% Pinot Gris from Hickory Downs Estate, Nillumbik Yarra Valley. Saffron is the name we use for our skin contact/orange wines. 24 hours skin contact to extract extra flavours from the skins, as well as extracting phenolics - natural anti-oxidants that allow us to use absolutely minimal sulphites. Then a natural yeast fermentation in older barrels for extra texture and complexity.
